Spaghetti Quadrati (Square) or "Spaghetti alla chitarra" (Guitar Spaghetti) is a type of spaghetti pasta with a square section: the width of the cut is 2 mm and the thickness is approximately the same.
The tool with which they are prepared, called the guitar, gives the spaghetti quadrati a squared thickness and a porous consistency that allows the sauce with which it will be seasoned to adhere completely.
Durum wheat semolina and water are used for the pasta. It is then worked for a long time and after resting in the fresh air it is rolled out with a rolling pin.
