The uncontaminated territory of the Irpinia mountains gives us the water of its sources which, together with the wheat from Puglia, Campania and Basilicata, allows us to work the pasta with the same genuineness and passion of our grandmothers.
Drawing is one of the most important steps in the preparation of high-quality pasta. That's why we have chosen to use special bronze dies with drying at low temperatures where the drying time can vary depending on the weather conditions (40/45 ° for 24/48 hours) on frames in static cells.
This method allows you to obtain a pasta that keeps the nutrients of the raw materials used intact in all long and short formats because we want to give our consumers the scent and essence of our territory. Then this gives to the pasta a particular roughness that significantly increases the absorption of any seasoning.
Born from an ancient passion, the Pastificio Graziano is located in Manocalzati in the shadow of the Picentini Mountains, an uncontaminated natural environment of Irpinia (Campania, Italy). Its production philosophy moves in the wake of the tradition of the Neapolitan pasta makers while retaining the peculiarities of the land of origin. The love for the territory and for its food culture takes the form of a genuine pasta because it is 100% produced with Italian ingredients: durum wheat semolina, water and pasta knowledge. In fact, the pasta factory produces high-quality dry pasta exclusively in special and typical regional formats using local raw materials. This is the secret of the unmistakable flavour of our pasta.

In making our pasta we do not compromise to offer our consumers a product of impeccable quality. Transparency, sustainability and quality are our values: we demonstrate it with the rigorous controls that we carry out on the entire production chain, from the choice of 100% Italian wheat to the use of water subjected to ultrafiltration treatment capable of removing or reducing the presence of chlorine and heavy metals, analysis of the chemistry and biology department of the University of Salerno, a guarantee of total product traceability. In fact, to find out where our pasta comes from, just use the batch number on the label of the package purchased. Finally, our pasta is one of the few to boast of the Kosher and Halal brands that certify its compliance with the ethical and hygienic health standards, the law and Jewish and Islamic doctrine.
