Characteristics of Ogliarola Garganica Olive Oil 

Golden yellow in colour with light greenish reflections, quite viscous. On the nose, it is very pleasant, medium intensity of fruity aromas with a characteristic almond scent. Generally, Ogliarola monocultivar oil has a medium fruity, therefore more intense than Leccino, and definitely less than Coratina. The hint of bitter and spicy is very balanced, medium intensity. Overall, a harmonious, elegant oil with its own character that manages to combine aroma and body, equidistant between the various components, none of which ever prevails over the others.

Ogliarola Garganica is the autochthonous cultivar spread on the Gargano, an area in the north of Apulia. The olive trees of Ogliarola Garganica are tall and very robust, it is a rustic, fast-growing plant. Ripening is quite late, from mid-October to mid-November.

The fruit of ogliarola is green, elliptical in shape with a round apex and a rounded base. The olive of the ogliarola garganica has a medium-small size and its weight varies from 2 to 3 grams. The olive oil takes on a yellow colour with green reflections. it has a delicate flavour tending to be spicy and its aroma is fruity and is very similar to almond, another very important plant for these places.

The flavour of the Ogliarola Garganica is intense and the spicy taste is due to the presence of antioxidant phenolic compounds of extra virgin olive oil.
