The Pastificio Demetra is a small reality born in 2019 in Scampitella, in the province of Avellino.
Francesco Rauseo and his wife reproduce in their workshop the traditional method of air-drying Pasta by drying the Macaroni at very low temperature, preserving the organoleptic and nutritional values of the product.
The pasta workshop is located at 800 m above sea level, in an idyllic landscape of green hills. what makes the difference is the air with which the pasta is dried, outside with the mountain air that dries the pasta in a uniform and genuine way.
Macaroni Pasta Bronze-drawn
The bronze drawing is recognized by examining the roughness of the pasta: if smooth it was drawn with Teflon dies, if rough then, bronze dies were used. The roughness is an advantage because it facilitates the adhesion of the sauce.
It's only when you will taste it that you will understand the difference with a mass-produced product.
