The uncontaminated territory of the Irpinia mountains gives us the water of its sources which, together with the wheat of Puglia, Campania and Basilicata, unites us to work the pasta with the same authenticity and passion of our grandmothers.
Drawing is one of the most important steps in the preparation of high-quality pasta. That's why we have chosen to use special bronze moulds with low-temperature drying in which the drying time can use a second of the weather conditions (40/45 ° for 24/48 hours) on frames in static cells.
This method allows you to obtain a paste that keeps the nutrients of the raw materials intact used in all long and short formats because we want to dare our consumers the scent and essence of our territory. So this gives the pasta a particular roughness which increases the attention of the absorption of any seasoning.
Born from an ancient passion, the Pastificio Graziano is located in Manocalzati in the shadow of the Picentini Mountains, an uncontaminated natural environment of Irpinia (Campania, Italy). Its production philosophy moves in the wake of the tradition of the Neapolitan pasta makers while maintaining the peculiarities of the land of origin. The love for the territory and for its food culture takes the form of a genuine pasta because it is 100% with Italian ingredients: durum wheat semolina, knowledge of water and pasta. In fact, the pasta factory produces high-quality dry pasta included in special and typical regional formats and uses local raw materials. This is the secret of the unmistakable flavour of our Italian pasta.
