Heather (Calluna vulgaris) also called Scotch heather or ling is a widespread plant in the Mediterranean areas, it is part of the Ericaceae family and includes 700 species. The characteristic of the plant is to always be green, with particular fa-shaped leaves. In the fall or spring, America produces a dense number of perfect flowers for the production of heather honey. The flowers have the typical bell-shaped shape and are of various colours: pink, purple or white.

The young juicy shoots and the seeds of heather are the principal food of the red grouse (Lagopus scoticus)

Organoleptic characteristics of Heather honey: cloudy even when it is liquid, it crystallizes quickly. It has a dark amber colour with reddish reflections when it is liquid, and brown-orange when crystallized. Smell and taste are moderately intense, persistent in the mouth.

Heather honey can be combined with seasoned and spicy cheeses, and as "table" honey, tasted in purity, it does not give a quick sense of satiety like other kinds of honey.
