Natural wine with no added sulphites
Cabernet Sauvignon Terra di Rovo is a 100% natural wine because, during the production phases of processing and bottling, we do not add any kind of artificial yeast or sulphites in order to leave the wine free to express itself at best of its potentiality. We make it using only our own cabernet sauvignon organic grapes without ageing it in barrique.
We preserve do our best to preserve the freshness of each individual bunch. After harvesting, we immediately process the grapes with the press and leave them to ferment for a few days.
The fermentation process takes place in steel containers in a totally natural way. We do all we can to not to change the original body and aroma of the wine in any possible way.
In full respect of the Italian wine making traditions, we carry out every phase of processing in the field and in the cellar during the waning moon days. Once the wine is ready, we bottle our cabernet sauvignon and let it refine in the bottle for several months.
Characterized by a very intense purple pigmentation, with delicate purple reflections. On the palate is full and warm, with slightly high acidity and a low alcohol taste.
It elegantly matches all dishes with an intense flavour. Best to enjoy it with cured meats, grilled meats and hard matured cheeses.
It is best-appreciated Served at a temperature of 16-18 C.
Cabernet Sauvignon 100%
We planted it in 2014 in full respect of the surrounding environment avoiding to remove any of the existing trees and plants. We decided to plant it according to the Guyot system with very low density. The flora surrounding the vineyard has remained unchanged to ensure that the micro-ecosystem of native plants and flowers help the vineyard grow and protect it from attacks by pests and weeds.
Generally done at the beginning of October. The grapes are handpicked exclusively by local winemakers. The same who take care of the vines throughout the year.
